Creamy Penne & Mushrooms With Seasoned Almonds "Breadcrumbs"



2 tablespoons olive oil

1/2 white onion, finely diced

2 cloves garlic, minced

1 (4-ounce) package mixed wild mushrooms

1 (8-ounce) package sliced button mushrooms

Salt and pepper to taste

1 tablespoon dry sherry

1 pint non-fat half-and-half

1/2 teaspoon fresh thyme leaves

1/8 teaspoon dried sage

1/2 cup low-fat sour cream

1 (1-pound) box penne pasta

Almond Breadcrumbs (recipe below)

Almond Breadcrumbs: 3/4 cup ground almonds

2 teaspoons olive oil

1/2 teaspoon fresh thyme leaves

1/4 teaspoon salt

1/8 teaspoon black pepper



Preheat oven to 375°F. Heat olive oil in a large skillet. Add onion and garlic; sauté on medium heat until onion is translucent. Add mushrooms, cover, and cook until soft.  Season with salt and pepper. Add sherry, and stir for a minute or two. Add half-and-half, thyme and sage, and bring to a simmer. Simmer gently, stirring occasionally, until half-and-half thickens slightly. Cool slightly and stir in sour cream. Season again with salt and pepper.Almond Breadcrumbs: Combine ingredients in a bowl until ready to use. Meanwhile, prepare pasta according to package directions. Drain and place in a large baking pan. Cover with mushroom mixture. Top with almond breadcrumbs and bake 25 to 30 minutes, until mixture is bubbly and almond breadcrumbs are toasty. Serve.
