Flavorful Beans with Bacon & Breadcrumbs
These slow-cooked beans are easy to fix and worth the wait, plus they make the kitchen smell so good. They can be made vegetarian by using soy based imitation bacon.
1 (15-ounce) can white beans such as Great Northern, drained and rinsed
1 (15-ounce) can red beans, drained and rinsed
8 ounces bacon (or soy based bacon), diced
1/2 large white onion, chopped
1 cup water
1/3 cup light molasses
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon ground cloves
2/3 cup ground almonds
1 teaspoon minced fresh sage
Preheat oven to 250°F. Stir together beans, bacon and onion in a 8- or 9-inch square baking dish. In a bowl, whisk together water, molasses, salt, pepper and cloves. Pour over beans. Cover with foil and bake until bean liquid is thickened, about an hour. Increase heat to 350°F. Stir together almonds and sage, and sprinkle over the top. Bake 10 to 12 minutes, until almonds are golden and fragrant. Serve.
