Marinated Green Beans With Almonds, Ham & Radicchio

The ham in this dish can be whatever you prefer  try honey-baked, Black Forest, or prosciutto



1 1/2 pounds fresh green beans

4 slices cooked or cured ham, diced

3/4 cup slivered almonds, roasted

3/4 cup shredded radicchio

2 minced garlic cloves

2 tablespoons minced fresh basil

1 tablespoon minced fresh oregano

1 3/4 tablespoons red wine vinegar

1 3/4 tablespoons olive oil

Salt and pepper to taste



Bring a medium pot of water to a boil. Meanwhile, snap off ends of beans. Place beans in boiling water and cook 6-8 minutes, until tender but still bright green. Meanwhile, place ham, almonds and radicchio in a salad bowl, and prepare a bowl of ice water for beans. In a small bowl, whisk together garlic, basil, oregano, vinegar and olive oil; season with salt and pepper. Remove beans from the stove and place in ice water. Drain well and add to salad bowl. Toss with herb vinaigrette and serve.
