Almond Butter Banana Cookies
Created as part of Make-Ahead Snacks Collection by Marisa Moore, Registered Dietitian Nutritionist, on behalf of Almond Board of California. These snacks pack up and travel well for energy whenever and wherever you need it.
2 small very ripe bananas
1 1/2 cups old-fashioned oats
1/4 cup almond butter
1/4 cup sliced almonds
Pinch of salt (if using unsalted almond butter)
Preheat oven to 350°F. Lightly spray a cookie sheet with cooking spray or line with parchment paper.
In a mixing bowl, mash the bananas, leaving a few small chunks. Stir in the oats. Add almond butter and sliced almonds. Mix to combine.
Using a dinner spoon, scoop then flatten the mixture into 12 cookies. Place onto prepared baking sheet. Bake about 10 minutes or until the cookies are golden brown.
Tip: These cookies will keep for a few days in a sealed container. Enjoy them warm, reheated in a toaster oven, or at room temperature for a quick snack!
