Almond Flax Bites

Created by Lindsey Pine, RD, for the Almond Board of California. Not only do these bites taste exactly like a bran muffin, but they also have 7 grams of fiber and 7 grams of protein to help keep you full between meals.   



2 tablespoons ground flax seed

2 teaspoons slivered almonds

2 teaspoons dried blueberries

1 tablespoon unsalted and unsweetened creamy almond butter

1/4 teaspoon honey



In a small bowl, combine all of the ingredients.  Divide the mixture into 3 portions and roll each portion into a ball.    

Freeze for 10 minutes so that the bites firm up. 

Store in the fridge to keep bites firm.

Pro tip: to keep the mixture from sticking to your fingers, coat your hands with ¼ teaspoon of coconut oil.
