Created by Lindsey Pine, RD, for the Almond Board of California. Salads aren’t just for the main meal. They also make great snacks, especially when they’re full of protein and fiber!


INGREDIENTS:

1/3 cup canned white kidney beans or cannellini beans, rinsed and drained

1/3 cup packaged slaw mix (kale slaw or traditional coleslaw mix)

1 tablespoon bottled or homemade vinaigrette dressing

2 tablespoons slivered almonds

Mix all ingredients in a bowl and serve.
