Cucumber Salad with Lemon Almond Dressing

Cucumber Salad

1 English Cucumber, cut into 1/2-inch cubes

1/2 cup sliced almonds, toasted


1/2 tablespoon almond butter

2 tablespoons lemon juice

1/2 teaspoon lemon zest

2 tablespoons olive oil

Red pepper flakes (optional)

1 tablespoons of water

Salt and pepper (optional)



In a blender, combine all of the ingredients for the dressing.

In a bowl, toss the cucumber with the dressing. Garnish with the almonds.

Trying to get almonds. Are they available for retail? I love almonds and cashews but they are hard to find here unsalted. I have high blood pressure so I don't need the salt.
