Freekeh-Feta Salad with Almonds

Freekeh is an ancient grain from the Middle East that's newly popular. It is made of green wheat that is toasted. Look for cracked freekeh for a quicker cooking time. This grain makes a great base for a salad with flavorful additions like sweet potatoes and slivered almonds. Serve warm or cold.



1 tablespoon olive oil

1 medium sweet potato (about 8 ounces), cut into 1/2 inch pieces

Salt and freshly ground pepper

1 cup cracked freekeh

1/2 cup slivered almonds, toasted

1 orange, zested and juiced

1/4 cup chopped fresh parsley

2 green onions, white and green parts thinly sliced

1/2 cup feta cheese



Preheat oven to 400 F. Spread oil on a baking sheet with sides. Toss sweet potato pieces in oil, salt them lightly, and roast until they are tender and lightly browned, about 15 minutes. Set them aside to cool slightly.

In a medium pot, combine freekeh with 2 1/2 cups water and 1/2 teaspoon salt. Stir and bring to a boil. Cover the pot and lower heat to a simmer. Cook freekeh for 10 to 15 minutes, until all the water is absorbed. Transfer freekeh to a large bowl and fluff the grains.

Add sweet potatoes and oil from the pan, almonds, orange zest and juice, parsley and onions. Gently fold together and taste for seasoning. Add a pinch of salt and pepper if needed. Sprinkle feta on top and serve.
