1 cup millet

2 cups mint tea (or water)

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon orange zest

2 tablespoon orange juice

2 cups water

3/4 cup apple, small dice

1/2 cup sliced or slivered almonds

1/4 cup unsweetened dried cherries

1/4 cup dried apricots, chopped

1/4 cup raisins

2 tablespoons shallot, minced

1/4 cup scallions, sliced

1/4 cup parsley, chopped

Salt and pepper to taste

PREPARATION:

Combine the millet and the tea in a medium sized sauce pan, bring to a boil, reduce heat to low, cover. Cook for 12-15 minutes or until water absorbed. Fluff with a fork and cool.

In a large bowl combine the remaining ingredients with the cooked millet. Serve cold.
