Roasted Trout With Almonds, Lemon & Fennel

2 medium bulbs fresh fennel, sliced

1 tablespoon olive oil

1/2 teaspoon grated lemon zest

Salt and pepper to taste

3/4 cup slivered almonds

2 (1-pound) whole trout, gutted and split

6 thin lemon slices

1 teaspoon chopped fresh Italian parsley, plus sprigs to garnish

Preheat oven to 400°F. Place fennel in a baking pan, and toss with olive oil and lemon zest. Season with salt and pepper. Roast 10 minutes; stir, and roast 10 more minutes. Add almonds on one side of pan, and roast 10 minutes more, for a total roasting time of 30 minutes. Season trout inside and out with salt and pepper. Place on top of fennel and almond mixture, and top with lemon slices. Roast 20 minutes, or until trout is opaque. Place trout on a serving platter. Stir Italian parsley into fennel and almond mixture, and spoon around trout, garnishing with parsley sprigs. Serve.
