1 lb, 9 oz Almonds, natural, whole, toasted

6 lb, 4 oz Heavy Cream

12 1/2 oz Egg, yolk

12 1/2 oz Sugar, granulated

1 Tbsp, 1/8 tsp Vanilla Bean Paste


PREPARATION:

PREPARATION:

1) Preheat oven to 250°F 2) Toast almonds in oven for 15 to 20 minutes. 3) Allow to cool and place into a robot coupe to grind. 4) Bring cream to a boil over medium high heat. 5) Remove from heat and add almonds. 6) Allow to steep until cream is cooled slightly, about 20 minutes.  7) In a mixing bowl, combine the egg yolks, sugar and vanilla. 8) Strain the almonds from the cream and temper into the yolk mixture. 7 pounds and ½ ounces will remain. 9) Portion 4.5 ounces into 6 ounce ramekins and bake in the preheated oven in a water bath until set, about 3 to 4 hours checking every hour. 10)  Remove and cool at room temperature. 11)  Wrap tightly and refrigerate until ready to use
