1 lb, 8 oz Almonds, natural, sliced

1 lb Butter, unsalted

1 lb, 8 oz Sugar, granulated

6 oz Water

1 tsp Vanilla Extract

1/2 tsp Salt, kosher

2 lb Bittersweet Chocolate, not sweetened

1 lb Semi Sweet Chocolate

6 oz Milk Chocolate or White Chocolate



1) Preheat oven to 400°F 2) Line a full sheet tray with aluminum foil and oil lightly.  Set aside. 3) In a separate full sheet tray spread almonds out and toast in preheated oven for 8 minutes until lightly browned. 4) Let cool at room temperature. 5) In a large heavy bottomed sauce pan bring the butter, sugar, water, vanilla extract and salt to a boil.  Do not stir during the cooking process. 6) Continue to boil until 300°F is reached and a dark golden brown is achieved. 7) Take 12 ounces of the toasted almonds and stir into the toffee then immediately spread out evenly on the aluminum lined sheet tray. 8) Place in the refrigerator to set and cool. 9) Meanwhile temper the bitter sweet and semi sweet chocolate in a double boiler until proper tempering is achieved. 10) Pour the tempered chocolate over the now cool toffee and sprinkle with remaining toasted almonds. 11) Drizzle with melted white chocolate and place in the refrigerator to set. 12) Break into appropriate sized pieces and store in an air tight container, layering with parchment, under refrigeration for up to a week.
