Did you attend IFT19 Annual Meeting + Food Expo, June 3-5, 2019 in New Orleans? Throughout the Expo, the Almond Board of California (ABC) featured a variety of almond snack and beverage samples, the latest sustainability, consumer and nutrition research, and access to industry and culinary experts to answer any almond-centric questions.
Chef Rob Corliss of All Things Epicurean participated in live demonstrations at the ABC booth each day at noon. He prepared, presented, and sampled inspirational almond-centric recipes and discussed unique ways to formulate with almonds in line with the latest flavor and ingredient trends.
Throughout the Expo, the ABC booth featured an array of trend-forward samples, each featuring different almond forms and formulation techniques, to inspire unique flavors and textures for both sweet and savory applications. The following recipes were featured throughout the Expo and can now be found on ABC’s Recipe Center:
This baked snack bar features three almond forms – almond protein powder, almond butter and sliced natural almonds – combined with yuzu, diced lemon peel and poppy seeds for a delicate citrus flavor.
The combination of almonds and chickpeas creates a quality plant-protein base for this modern snack or breakfast cookie, and dark chocolate chips and an almond butter drizzle add craveable texture.
Whole roasted almonds are coated in a combination of ground dried raspberries, white chocolate, puffed rice, chopped almonds and a dusting of almond flour.
Combining creamy almond butter with cocoa powder, cacao nibs, espresso powder and coconut flakes creates a robust flavor profile suitable in snack applications or delicious as a standalone spread or dip.
Smooth and creamy unsweetened almond milk and toasted grains create a thick and creamy beverage base to blend myriad fruit flavors, like the dragon fruit and strawberry notes found in this all-day almond beverage.
California Almond Solution Sessions
ABC again hosted the popular individual and small-group California Almond Solution Sessions, led by Chef Rob Corliss at the ABC booth. The personalized, 20-minute sessions explored the versatility of almonds and answered any questions to help inspire a pioneering approach to snacking.
