Recipe created by the Curious Confectioner: This herbed Almond Nut Cheese is delicious served on a light, crispy Almond and Flax Seed crisp bread. This recipe provides the perfect gluten-free and spreadable savory snack that you can feel good about enjoying.

165g blanched almonds (soaked overnight)

165g cashews (soaked overnight)

1 cup measure of filtered water

1tsp probiotic powder

Nutritional yeast

Salt

Garlic powder

Fresh chives

Fresh flat parsley


PREPARATION:

PREPARATION:

1) Process nuts with the water and probiotic powder until smooth

 

2) Strain the processed nut mix through cheesecloth squeezing out the majority of the water

 

3) Leave the nut mix straining through cheesecloth in a warm place for up to 48 hours (depending on how ripe a cheese is require). This will allow the preserving probiotic cheese culture to form

 

4) Once cultured, remove nut cheese from cheesecloth and season with nutritional yeast, salt and garlic powder until the desired taste is achieved

 

5) Chop the herbs finely and add to the mix to taste

 

6) Finally set the cheeses in 70mm ring moulds. This cheese can then be dehydrated to create a rind before being kept in the fridge
