1 pound Brussels sprouts

1 cup sliced and toasted almonds

1 cup shaved pecorino Romano cheese

Lemon Mustard Vinaigrette

140 g egg yolks

70 g lemon juice

12 g salt

175 g cider vinegar

2 g paprika

20 g sugar

30 g Cholula hot sauce

80 g dijon

600 g canola oil

Shaved Brussels Sprouts Salad with Almonds and Pecorino Cheese

 

Instructions:

  1. Thinly shave the Brussels sprouts. 
  2. Toss with your desired amount of lemon mustard vinaigrette
  3. Season with salt and pepper
  4. Place the salad into four bowls and top with the toasted almonds and shaved cheese

 

Lemon Mustard Vinaigrette

 

Instructions:

  1. Combine yolks, lemon juice, salt, vinegar, paprika, sugar, Cholula, and dijon in a blender and puree.
  2. Slowly drizzle in the canola to form an emulsion.
  3. Taste and adjust as desired
