The California Almond industry has come a long way with its many food safety programs. In fact, the industry has come so far that the Preventive Controls Rule of the Food Safety Modernization Act (FSMA) is really not new, said Brian Dunning, chairman of the Almond Quality and Food Safety Committee, at this year’s Food Quality and Safety Symposium. If you’ve been using any of the third-party certifications in your plant, you’ve been building the foundation of your food safety programs. Now it’s time to build on that foundation. Presentations from the symposium are now available, including resources to conduct an almond hazard analysis and progress in FDA’s tree nut risk assessment.
