5-Spice Dark Chocolate Crunch Almond Butter 



Serves: 14, 2-Tbsp servings
  • 12 oz California Almonds, whole, roasted
  • 1.5 f l oz vegetable oil (or almond oil)
  • 2.5 oz ginger, crystallized
  • 0.1 oz cocoa powder, unsweetened
  • 0.15 oz Chinese 5-spice powder
  • 1 oz bittersweet chocolate, 60% cacao, small chop
  • 0.6 oz California Almonds, whole, roasted, fine chop
  1. Warm whole roasted almonds in microwave or over low heat.
  2. Place warm whole almonds in a Robot Coupe®. Blend, with metal blade, for one minute.
  3. Add oil and blend for 10 minutes. Almond butter should have a thin to medium viscosity and be creamy smooth.
  4. Add crystallized ginger and blend, with almond butter, until creamy smooth. (Approximately 2 to 3 minutes.)
  5. Add cocoa powder and Chinese 5-spice powder. Blend for 1 minute to evenly combine to a smooth and creamy consistency.
  6. Remove almond butter from the Robot Coupe® and place in a mixing bowl—ensure almond butter is cooled (and not warm); otherwise, the chocolate chips will melt vs. remaining crunchy bites. Add chopped bittersweet chocolate and fine chopped almonds and stir to evenly combine.
  7. Place the 5-Spice Dark Chocolate Crunch Almond Butter in a sealed container and reserve refrigerated.
