Almond Brittle

This sweet, crunchy brittle is covered with almonds and perfect as a delicious dessert or holiday party treat! Our almond brittle recipe is a creative new way to get your almond crunch.

Ingredients
Serves: 5 pounds
  • 1 lb, 12 oz Sugar, granulated
  • 12 oz Water
  • 20 oz Corn Syrup, light
  • 1 lb Almonds, sliced
  • 2 oz Butter, unsalted
  • 2 tsp Salt, kosher
  • 1/2 oz Baking Soda
Preparation
  1. In a heavy-bottomed sauce pan, bring sugar and water to a simmer.
  2. Add corn syrup and bring to 290 F (do not stir).
  3. Add almonds and cook until 311 F is reached, stirring constantly.
  4. Add butter, salt and baking soda, stirring well.
  5. Pour onto sheet tray lined with silpat and let set.
  6. Break into desired size.
  7. Store airtight at room temperature until ready to use. NOTE: To crush for topping, pulse in a food processor.
