Ramen Crunch Almonds Snack Mix

Inspired by the high-quality ramen dish enjoyed at restaurants, this almond snack mix features whole roasted tamari natural almonds glazed with honey-sriracha and flavored with the bold contrast of blanched almond flour, dulse flakes, umami powder and a touch of parsley flakes. To increase the crunch, these almonds are tossed with crisp veggie sticks and dried ramen noodles, resulting in a approachable yet premium snacking experience.   • 8 oz Whole roasted tamari natural almonds
  • 0.50 oz Blanched almond flour
  • 3 oz Clover honey
  • 0.50 oz Unsalted butter
  • 0.10 oz Sriracha
  • 0.01 oz Dried parsley flakes
  • 0.05 oz Dried dulse flakes
  • 0.30 oz Umami powder
  • 1.40 oz Ramen noodles, plain, dried and broken into small chunks
  • 2 oz Dehydrated veggie sticks
Preparation
  1. Heat honey, butter and sriracha in a non-stick saucepan; bring to a boil (without stirring), then simmer 2 minutes.
  2. Add tamari almonds and gently stir to combine; then simmer 2 minutes, stirring occasionally.
  3. Add dried parsley flakes and dulse flakes to almonds, then simmer additional 1 minute; stirring until the almonds have absorbed the honey mixture and are fully glazed/coated.
  4. Immediately place glazed/coated almonds on a parchment lined sheet pan, separate and cool for approximately 1 minute (but not harden, as remaining seasonings will not adhere).
  5. Add warm glazed almonds to a mixing bowl. Immediately add umami powder & blanched almond flour, then quickly toss (with gloved hands) to evenly combine and lightly coat each almond.
  6. Spread the coated ramen almonds out, back on the parchment lined sheet pan; then allow the almonds to cool at room temperature and harden for approximately 5 minutes.
  7. To finish the snack mix - place the ramen almonds, dehydrated veggie sticks (green bean, carrot, taro, squash, multiple sweet potatoes) & dried ramen noodles in a sealed container - and store at room temperature.
