- 2 large egg whites
- 1 tablespoon vanilla extract
- 4 cups whole almonds
- 1/3 cup granulated sugar
- 1/3 cup packed brown sugar
- 1 teaspoon salt
- 1 tablespoon ground cinnamon

- Preheat the oven to 300ºF and spray a cookie sheet with nonstick cooking spray or line it with parchment paper.
- In a large bowl, beat egg whites until frothy. Whisk in vanilla extract. Add almonds; stirring gently to coat.
- In a separate bowl, mix together sugar, brown sugar, salt and cinnamon. Pour over almonds and mix until almonds are coated.
- Spread almonds evenly on cookie sheet pan. Bake for 25-30 minutes or until almonds are crisp, stirring a few times during backing. Check frequently, stirring as needed, so almonds don’t burn.
- Remove from oven and let cool completely, for at least 15 minutes, before eating or storing in airtight container.
