- 16 ounces golden raisins jumbo
- 12 ounces almonds, natural whole
- 8 ounces goji berries, dried whole
- 8 ounces bittersweet chocolate, 60% cacao chips
- 1.50 ounces cocoa powder unsweetened
- 0.40 ounce espresso powder
- 0.20 ounce cinnamon ground
- 16 ounces almond butter creamy
- 4 fluid ounces water, cold filtered
- 20 ounces almonds, blanched slivered
- 2.40 ounces cacao nibs
Mocha Goji Almond Crunch Bar

- Soak the golden raisins in hot water for 10-15 minutes to help plump them up even more; then drain and discard the water and reserve the raisins.
- Place plumped raisins, whole almonds and goji berries, in Robot Coupe®. Pulse just until a medium crumble/ lose paste forms. Add the bittersweet chocolate, cocoa powder, espresso powder and cinnamon and pulse just until combined. Add the almond butter and cold water and pulse just until the evenly combined mixture holds its shape when pressed in your hands.
- Remove from Robot Coupe® and place the mixture in a mixing bowl. Add blanched slivered almonds and cacao nibs and stir/blend to combine evenly.
- Evenly spread mixture into a 1/2 sheet pan lined with parchment paper, then top the mixture with another sheet of parchment paper and use a rolling pin to evenly flatten and press the mixture. Place the 1/2 sheet pan in refrigerator for 1 hour, to firm up the mixture.
- After firming up - remove the top parchment paper, then portion into 54 equal snack bars (9 W x 6 L).
- Place the bars in a sealed container and store refrigerated.
