Almonds, cranberries, and a hint of mint bring this nourishing bowl into play to satisfy you on the busiest days! Created by Corey Calliet, celebrity fitness trainer, on behalf of Almond Board of California.



1 cup uncooked quinoa

1/4 cup dried unsweetened cranberries

1/4 cup sliced almonds

1/8 cup fresh basil

1 tablespoon avocado oil

1/4 teaspoon sea salt

1 teaspoon lime juice



Rinse quinoa well using a strainer under running water before cooking. In a medium sized pot, add 1 cup quinoa and 2 cups water and bring to a boil over medium-high heat, then cover and decrease to a gentle simmer. Cook until the quinoa has absorbed all the water (approximately 10-15 minutes). Remove from heat and let stand for 5 minutes. Add quinoa with all remaining ingredients to a medium sized mixing bowl and gently fluff with a fork until everything is well incorporated. Garnish with additional basil leaves and enjoy!
