Fermented Almond Strawberry Bar

Combine the nutty, umami flavor of fermented almonds with the bright, tangy sweetness of strawberries to create this convenient gut friendly snack bar. Developed by Allison Rittman, Culinary Culture on behalf of the Almond Board of California.

Ingredients
Serves: 50g (1 bar), Makes approximately 6 servings
  • 250g Oat Flour (Fine)
  • 150g Almond Flour (Deffated, Blanched, Fine Ground)
  • 65g Date Syrup
  • 3g Almond Extract
  • 2.25g Sea Salt (Fine)
  • 70g Water (Filtered)
  • 75g Coconut Oil (Refined)
  • 40g Almond Butter (Blanched)
  • 75g Fermented Almonds
  • 175g Strawberry Filling

  • 8x8 Baking Dish
  • Food Processor
  • Parchment Paper
Preparation
  1. Heat oven to 350ºF. Line an 8x8 baking dish with parchment paper so that there is an overhang on two sides.
  2. In a food processor, pulse together oat flour, almond flour, date syrup, almond extract, sea salt, water, coconut oil and almond butter 2-3 times.
  3. Run processor at full speed until dough comes together into a loose ball that holds its shape when pressed, about 30 seconds.
  4. Add fermented almonds to food processor and pulse to incorporate almonds into dough, but still leave in large pieces, about 20 pulses.
  5. Spread strawberry filling in an even layer on top of crust.
  6. Sprinkle remaining dough into a single layer over strawberry filling, keeping some larger clumps.
  7. Bake until topping is golden brown and filling is slightly bubbling along the sides, 30-35 minutes. Transfer to a rack to cool completely, about 1 hour.
  8. Remove bars from pan and cut into 50g portions.
