Vegan Coconut-Almond Bites

Ingredients
Serves: 120
For the Bites
  • 2 1/2 lbs Golden syrup
  • 3 1/2 lbs Dessicated coconut, toasted
  • 2 1/4 lbs Whole raw almonds, toasted
  • 1 lb Syrup corn light
  • 1 1/2 tsp Salt
  • 1lb, 2oz Creamy almond butter
For the Topping
  • 1 lb vegan mini chocolate chips
  • 9oz almond butter creamy
Preparation
For the Bites
  1. In a large pot, warm the golden syrup.
  2. Stir in the coconut, almonds, corn syrup, salt, and almond butter.
  3. Spread the mixture evenly into a full sheet pan that has been oiled. Press the mixture with a rolling pan. Let cool.
For the topping
  1. In the top of a double boiler, combine the chocolate chips and almond butter and melt, stirring until uniform.
  2. Spread it over the surface of the cooled Bites and leave at room temperature to set.
  3. Cut as desired.
  4. Notes: You can press a whole toasted almond into the top of each bite as garnish.
