Cereal-liciously Crispy Almond Chips

These colorful chips deliver nostalgia by the handful. Almond flour dough is rolled through a sheeter, baked to a crisp and drizzled with playful zigzags of pandan, goji berry and blueberry spirulina almond milk icing.

Ingredients
Serves: 60g (2 oz) serving
For the Almond Milk Drizzle
  • 139.85g Powdered Sugar
  • 38.84g Almond Milk
  • .98g Desired Flavoring (Goji Extract, Pandan Extract, Blueberry Spirulina Concentrate Powder)
For the Cereal-liciously Crispy Almond Chips
  • 65.65g White Rice Flour
  • 21.88g Tapioca Flour
  • 9.13g Potato Starch
  • 0.7g Salt
  • 1.76g Xantham Gum
  • 8.28g Almond Milk Powder
  • 9.78g Sugar
  • 32.77g Defatted Almond Flour
  • 11.74g Natural Milk Type Flavor Powder
  • 19.69g Water
  • 14.44g MCT Oil
  • 5.21g Sunflower Lecithin
  • 19.2g Cane Sugar Syrup, plus additional for glazing prior to bake
  • 6g Almond Milk Drizzle (Pandan/ Goji/ Blueberry Spirulina)
Preparation
For the Almond Milk Drizzle
  1. In a small bowl measure the powdered sugar.
  2. Separately, combine the almond milk with desired flavorings (.98g goji extract, pandan extract, or blueberry spirulina concentrate powder.)
  3. Slowly whisk the almond milk mixture into the powdered sugar, stir until smooth and transfer to a piping bag for cereal milk chip assembly.
For the Cereal-liciously Crispy Almond Chips
  1. In a planetary mixer combine white rice flour, tapioca flour, potato starch, salt, xantham gum, almond milk powder, sugar, defatted almond flour, and natural milk type flavor powder. Mix to combine.
  2. Next add the water and mix until a dough has formed.
  3. Combine the MCT oil with sunflower lecithin and cane sugar syrup, then add to the mixer.
  4. With a dough sheeter, roll the dough to about 5mm thickness.
  5. Cut to desired shape and brush with cane sugar syrup.
  6. Bake in an oven set to 350F for 8 minutes.
  7. Cool and glaze with flavored almond milk drizzle (Pandan/Goji/Blueberry Spirulina)
