Date and Ginger Smoothie
The flavors of this really wake you up! It’s great to make ahead and refrigerate overnight, so the flavors come together and it’s ready to go when you are. Microwaving the dates makes them easier to puree.
1/2cup orange juice
4 soft, pitted dates
1 cup sweetened vanilla almond milk**
1 tablespoon unsalted almond butter
1/2 teaspoon minced ginger from a jar
Dash ground cinnamon
Pinch kosher salt
In a microwave-safe cup, combine the orange juice and dates. Microwave them on high for 15 seconds. Pour them into a blender with the remaining ingredients. Blend them on high to puree. Taste and adjust seasonings. Refrigerate for 2 hours or overnight, or serve immediately. If refrigerated, stir together the smoothie again before serving.
**Optional: use unsweetened, unflavored for fewer calories.
