Za’atar Almond Flour Crackers

These almond flour crackers are a great way to deliver a crispy, healthy snack that is gluten free and delivers 4 grams of almond protein per 30 gram serving. The crackers also deliver on a global flavor with the incorporation of a za’atar seasoning blend, which contributes a subtle, nutty and earthy taste. Za’atar is a traditional Middle Eastern seasoning blend that combines herbs, sesame seeds, sumac and salt.

Dry Ingredients (by weight)
  • 15.84 oz (448.4 g) Blanched Almond Flour
  • 7.68 oz (217.4 g) Almond Protein Powder (50% protein)
  • 8.64 oz (244.6 g) Ultra Sperse Corn Starch
  • 1.92 oz (54.40 g) Sugar
  • 1.92 oz (54.40 g) Za'atar Seasoning Blend
  • 5.40 g Baking Soda
  • 4.8 g Salt
  • 3.4 g Monocalcium Phosphate
Wet Ingredients (by weight)
  • 11.5 oz (326 g) Water
  1. Blend the dry ingredients together in a mixer.
  2. Add the water to the dry ingredients and blend until the dough has a soft pliable texture.
  3. Run the dough through a pasta roller into thin sheets (1.1 to 1.2 mm).
  4. Dust the sheets with some almond flour to prevent sticking.
  5. Roll the dough with a cracker roller/cutter tool that can also add holes to the cracker to ensure flat baking.
  6. Bake 370˚F for 9-10 minutes. Exact time/temperature may vary with equipment.
