- 1 lb, 12 oz Sugar, granulated
- 12 oz Water
- 20 oz Corn Syrup, light
- 1 lb Almonds, sliced
- 2 oz Butter, unsalted
- 2 tsp Salt, kosher
- 1/2 oz Baking Soda

- In a heavy-bottomed sauce pan, bring sugar and water to a simmer.
- Add corn syrup and bring to 290 F (do not stir).
- Add almonds and cook until 311 F is reached, stirring constantly.
- Add butter, salt and baking soda, stirring well.
- Pour onto sheet tray lined with silpat and let set.
- Break into desired size.
- Store airtight at room temperature until ready to use. NOTE: To crush for topping, pulse in a food processor.
