Coconut, Almond & Mango Rice Pudding

Ingredients
For the Rice Pudding
  • 11oz Arborio rice
  • 6.5 oz Vegan sugar
  • 12oz Coconut milk, aroy-d brand
  • 2lb, 4.5oz Almond milk
  • 1/4oz Fresh ginger, grated
  • 1 tbsp Mandarin zest
  • 1 each Star anise pod
  • 4oz Almond Milk
  • 4oz Coconut milk
  • 1 tsp Lime zest
For the Garnish
  • Sesame seeds, toasted
  • Diced fresh mango
  • Sweetened shredded coconut
  • Sliced almonds, toasted
Preparation
For the Rice Pudding
  1. In a large pot, combine the rice, sugar, 12 oz coconut milk, 2 lb 4 ½ oz almond milk, ginger, mandarin zest, and star anise. Bring to a boil, stirring frequently.
  2. Reduce the heat and simmer 30 to 40 minutes, stirring frequently, until the rice is almost cooked.
  3. Add the remaining 4 oz almond milk, 4 oz coconut milk, and lime zest.
  4. Continue to cook until the rice is tender.
  5. Remove from the heat and portion into dishes.
  6. To serve, top each portion with sesame seeds, mango, coconut, and slice almonds.
