Pearl Sugar Waffles with Cocoa–Almond Butter Sauce, Honey Sour Cream & Blackberry Compote

Ingredients
Serves: 5 (2 waffles each)
For the Blackberry Compote
  • 2 oz granulated sugar
  • 2 oz water
  • 8 oz frozen blackberries
For the Cocoa-Almond Butter Sauce
  • 4 oz brown sugar
  • 3 oz almond butter
  • 1 oz cocoa powder
  • 6 oz whole milk
  • 1 tsp vanilla extract
For Plating
  • 10 each Pearl sugar waffles
  • Sliced almonds as needed
Preparation
For the Blackberry Compote
  1. In a pot, combine the sugar, water, and 4 oz of the blackberries. Bring to a simmer, then puree and strain.
  2. Mix the puree with the remaining 4 oz blackberries.
For the Coco-Almond Butter Sauce
  1. In a pot, combine the ingredients and bring them to a simmer, stirring until the sugar is dissolved.
  2. Remove from heat and cool the sauce to room temperature. Thin with additional milk if needed.
To Plate
  1. Heat 2 waffles per serving.
  2. Plate and top with 1 oz warm Blackberry Compote and ½ oz Cocoa–Almond Butter Sauce.
  3. Garnish with sliced almonds.
