Almond & Brussel Sprout Salad

Ingredients
Serves: 4
  • 1/2 cup slivered almonds
  • 1 pound shaved brussels sprouts
  • 1 medium Granny smith apple peeled and cubed
  • 2 tablespoons olive oil, divided
  • 1 tablespoon dijon mustard
  • 1 lime, juiced (about 2 tablespoons)
Preparation
  1. Heat pan over low heat and add almonds. Toast until lightly browned, being careful not to burn them. Set almonds aside to cool.
  2. Add 1 tablespoon oil to pan and add brussels sprouts to large saucepan. Cook for 5-7 minutes or until soft. Let brussels sprouts cool and then transfer to a large bowl.
  3. Add apple and almonds to brussels sprouts.
  4. In a small bowl whisk together the remaining olive oil, mustard and lime juice. Pour dressing over salad and toss together right before serving.
