Ingredients
Serves: 2oz Rope
  • 80g (21.53%) Bread Flour
  • 9g (2.54%) Cocoa Powder
  • 75g (20.31%) Sugar
  • 50g (13.45%) Corn Syrup
  • 13g (3.55%) Almond Butter
  • 24g (6.34%) Water
  • 1g (.25%) Salt
  • 3g (.76%) Mono & Di Glycerides
  • 4g (1.13%) Soy Lecithin
  • 1g (.27%) Chocolate Fudge Flavor
  • 1g (.27%) Vanilla Flavor
Preparation
Create Pre Mix 1
  1. Combine Almond Butter, Mono & Di Glycerides, and Soy Lecithin. Reserve.
Create Pre Mix 2
  1. Combine Bread Flour and Cocoa Powder. Reserve.
Create Almond Butter Chocolate Rope Dough
  1. In a sauce pot combine Sugar, Salt and Water, cook to soft-ball temperature stage at 240F.
  2. Reduce heat to 165F. Add Corn Syrup and Pre Mix 1, stir to combine.
  3. Add Pre Mix 2, stir to combine.
  4. Add mixture to a bowl and allow to cool until it reaches a dough-like consistency.

Notes

Almond butter, bread flour, cocoa powder and chocolate fudge and combined to create an indulgent dough that can be manipulated and formed into various shapes for confectionery products. Notably, this dough can be used to create a Chocolate Almond Butter Rocky Rope, an aspirational take on candy rope featuring almond butter, almond pieces and an almond milk glaze.
