Serves: 13.2g
  • 409g (23.62%) Defatted Almond Flour
  • 211g (12.20%) Confectioner’s Sugar
  • 30g (1.71%) Cocoa Butter
  • 701g (40.45%) Almond Butter
  • 61g (3.54%) Tapioca Maltodextrin
  • 7g (.38%) Sunflower Lecithin Powder
  • 13g (.77%) Maple Syrup Powder
Preparation
  1. In a robot coupe food processor combine Almond Butter, Melted Cocoa Butter, and Sunflower Lecithin. Pulse to combine.
  2. In a mixing bowl combine Defatted Almond Flour, Confectioners Sugar, and Maple Syrup Powder. Add to the robot coupe and pulse until incorporated.
  3. Gradually pulse in the Tapioca Maltodextrin approx. 1/3 at a time until incorporated and the base has thickened.
  4. Transfer mixture to a piping bag and reserve for use.
