Almond Coated Vegetable Fritters, Croquettes or Pakoras

Created by Jehangir Mehta, on behalf of the Almond Board of California The combination of almonds and chickpea flour together as a coating, and in partnership with one of these yogurt dipping sauces, adds unexpected protein to any of these “bar snack” offerings.

Ingredients
Serves: 2
  • 1 cup almond flour
  • 1 cup chickpea flour
  • 1/4 cup ground almond mixture (see sub recipe)
  • 1/2 cup water, more to adjust thickness of batter
  • 1 1/2 cups spinach, torn
  • 1/2 cup onion, chopped
  • 1/2 teaspoon turmeric powder
  • 1 jalapeno, finely chopped
  • 1/3 teaspoon salt
  • 1/3 teaspoon pepper
  • Vegetable oil, for frying
  • 8 tablespoons of Persian yogurt sauce (1 tablespoon per serving)
Ground Almond Mixture
  • 1 cup raw almonds (skin on)
  • 2 cups water
Preparation
  1. Mix together almond flour, chickpea flour, almond meal, water, spinach, onion, turmeric, jalapeño and salt and pepper in a large bowl.
  2. Heat vegetable oil in a deep fryer or 2-quart pot filled 3/4 of the way with oil. When oil is hot, place the batter mixture into the fryer, about four tablespoons at a time. The batter can be formed into a ball for a croquette, or left unformed as a fritter or pakora.
  3. Fry for 5-6 minutes, until the fritters are crisp and golden-brown and the vegetables have cooked through.
  4. Transfer to plate lined with paper towels. Pat with paper towel to absorb excess oil.
  5. Serve with yogurt sauce. (Yogurt sauce recipes at end of document.)
Ground Almond Mixture
  1. Place almonds in a large bowl and cover them with room temperature water. Soak overnight.
  2. Drain almonds.
  3. Pulse almonds in a food processor until roughly pureed.
  4. Cover and refrigerate; use within one week.
