Aztec Almond Hot Chocolate Recipe – Aneesh Popat (The Chocolatier)

Ingredients
Serves: 486g (7 servings) of hot chocolate
Chocolate Blend
  • 250g whole almonds
  • 160g 70% dark chocolate
  • 5g cinnamon
  • 2g chili powder
Almond Milk (Yields about 600g)
  • 250g whole almonds
  • 500g water
  • 25g agave
  • 2g salt
Preparation
Chocolate Blend
  1. Roast 250g of whole almonds for 20 minutes at 375 degrees F. We want the almonds to roast as well as release all the oils.
  2. Place the almonds in a food processor and grind to a coarse paste.
  3. Add 160g of 70% dark chocolate into the food processor.
  4. Blend the chocolate into the almond paste till smooth.
  5. Add cinnamon and chilli powder to taste and blend to incorporate.
  6. Blend the mix for a little longer till it becomes smooth and glossy. This is now the completed hot chocolate preparation.
Almond Milk
  1. Soak almonds in water overnight.
  2. The next morning, refresh the water and blend the almonds in a food processor.
  3. Pass this through a fine muslin cloth and blend with salt and agave. You can add vanilla as well.
  4. Heat almond milk in a pot and once warm, add in the hot chocolate preparation.
  5. Add as little or as much hot chocolate blend as you like. To make a Belgium style hot chocolate you can use equal amounts of milk to hot chocolate blend, making the final result very rich and indulgent.
  6. To get a good creamy hot chocolate use a hand blender to fully mix.
