Pumpkin Almond Snowball Cookies

Ingredients
Serves: Makes 12 cookies
  • 1 1/4 cup almond flour
  • 1 tbsp coconut flour
  • 1/2 tbsp pumpkin pie spice
  • 1/3 cup light brown sugar or coconut sugar
  • 1/4 cup pumpkin puree
  • 1 egg yolk whisked
  • 2 tbsp chopped almonds
  • 2 tbsp powdered sugar
Preparation
  1. Preheat the oven to 300 degrees F and line a baking sheet with parchment paper.
  2. In a medium-sized bowl whisk together the pumpkin puree, butter, and egg yolk. Next, add the almond flour, coconut flour, and pumpkin spice. Mix together with a wooden spoon and add your chopped almonds.
  3. Use a cookie scoop to portion the dough and roll it into balls.
  4. Bake for approximately 22 minutes and while the cookies are still warm dust them in powdered sugar and pumpkin spice. Enjoy!
