Lamb Kofta with Almond Flour Yogurt

Ingredients
Serves: 15 (2 skewers per portion)
For the Lamb Kofta
  • 6oz Onions, peeled
  • 1oz Garlic, peeled
  • 1/2oz Parsley
  • 3lb Ground lamb
  • 1 tbsp Kosher salt
  • 1 tsp black Pepper
  • 1 tsp Sumac
  • 1 tbsp Paprika
  • 2 tsp Aleppo chili powder
For the Citrus Yogurt Sauce
  • 13oz Full-fat Greek yogurt
  • 1oz Lemon juice
  • 1oz Orange Juice
  • 1 tsp Salt
For the Almond Flour Dukkah
  • 4oz Almond Flour
  • 1 tbsp Cumin seeds
  • 1 tbsp Coriander seeds
  • 2oz White sesame seeds
  • 1 tsp Black peppercorns
  • 1 tsp Kosher salt
  • 2 tsp Dried thyme
  • 2 tsp Sumac
Preparation
For the Lamb Kofta
  1. Combine the onions, garlic, and parsley in a food processor and process until finely chopped.
  2. Place the onion mixture in a bowl and add the lamb, salt, pepper, sumac, paprika, and Aleppo chile.
  3. Roll 2-oz portions into cylinders and skewer them with wooden or metal skewers.
  4. Cook the skewers on a char grill until fully cooked or place on a parchment-lined sheet pan and bake at 400°F for 6 to 8 minutes, until fully cooked.
  5. For each serving, plate two skewers, drizzle with Citrus Yogurt, and sprinkle with Almond Flour Dukkah.
For the Citrus Yogurt Sauce
  1. In a bowl, whisk together the ingredients.
  2. Transfer to a squeeze bottle and refrigerate.
For the Almond Flour Dukkah
  1. Spread the almond flour onto a sheet pan and bake in a 325°F oven for 4 to 6 minutes, or until lightly golden brown.
  2. In a saute pan, combine the cumin, coriander, sesame, and peppercorns and toast over low heat, stirring often, for 3 to 5 minutes, until aromatic. Cool to room temperature, then grind coarsely in a spice grinder.
  3. Mix the toasted almond flour with the ground spices, salt, thyme, and sumac.
