All-Purpose Almond Umami Sauce

This creamy sauce, whose ingredients include almond butter, reishi mushroom powder, nutritional yeast, liquid aminos, and seasonings, has multiple functions and can be repurposed into a dip, dressing or even a mustard-type topping. Created by Chef Rob Corliss of All Things Epicurean on behalf of the Almond Board of California.

Ingredients
Serves: 1 Tbsp (12g), Servings per container 20
  • 4 oz Almond Butter, Creamy
  • 3 fl oz Almond Milk, Unsweetened
  • 0.5 fl oz Lemon Juice, Fresh
  • 0.34 oz Liquid Aminos
  • 0.35 oz Light Brown Sugar
  • 0.10 oz Red Reishi Mushroom, Powder
  • 0.10 oz Nutritional Yeast
  • 0.08 oz Smoked Paprika, Ground
  • 0.05 oz Aleppo Chile Pepper, Flakes
Preparation
  1. Place all ingredients in a large mixing bowl and whisk to evenly combine. * Viscosity should be similar to a medium-thick satay sauce, that gently coats the back of a spoon. Sauce typically gets thicker upon refrigerating (depending on almond butter variety & thickness). If sauce becomes too thick, simply thin it out with a touch of almond milk to desired consistency.
  2. Place All-Purpose Almond Umami Sauce in a sealed container and refrigerate a minimum of one hour to allow the flavors to fully develop before using. * Utilize the All-Purpose Almond Umami Sauce chilled, in multiple applications.
Swirl Into or Drizzle Over:
  1. Rice dishes
  2. Pasta/noodles
  3. Baked or roasted potatoes
  4. Sauteed or grilled vegetables
  5. Grilled chicken, steak or pork skewers
Use as a dressing for:
  1. Salad
  2. Buddha bowls
  3. Grain bowls
Use as an ingredient in a recipe:
  1. Spiced Almond Butter Mustard: All-Purpose Almond Umami sauce + pommeray mustard + minced fresh chive
  2. Creamy Almond BBQ Salad Dressing: All-Purpose Almond Umami sauce + olive oil + cider vinegar + BBQ sauce
