Almond Crusted Broccoli Recipe

Serves: Makes 4 servings.
  • 2 cups almond meal
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2 cups broccoli florets
  • 1/2 cup almond milk
  • 1 tablespoon olive oil
  • ¼ cup slivered almonds
Preparation
  1. Preheat the oven to 375 degrees Fahrenheit.
  2. In a medium bowl, combine the almond meal, garlic powder and salt. Set aside.
  3. Place the almond milk in a small bowl and dip each broccoli floret in the milk.
  4. Dip the almond milk soaked broccoli in the almond meal mixture and coat thoroughly. Place the breaded broccoli on a parchment lined baking sheet. Discard leftover almond milk and almond meal.
  5. Once all the broccoli has been coated with almond meal and placed on the baking sheet, drizzle the olive oil evenly over the broccoli. Bake for 20 minutes.
  6. Toss the final product with slivered almonds. Makes 4 servings.
